according to the USDA Handbook No. 456, gram for gram, kale has fourteen times more iron than red meat. Spinach, comic strip power food, has approximately eleven times the iron as ground beef. Strawberries, cabbage, bell peppers, and even cucumbers have more iron per weight than ground beef or sirloin steak. Researchers have also found that Vitamin C, which is high in fruits and vegetables, significantly enhances the body’s ability to assimilate iron.

Fatty meat is high in cholesterol. The waste products of protein metabolism are acid (uric) which accumulate eventually precipitate in tissues as crystals. Meat tends to putrefy in the colon, producing toxic waste which speeds the metabolism and causes degenerative diseases, leading to premature death. Cancer immunity is built on low protein, non processed diet. These observations were made by Dr. Robert Good at the University of MN. Biochemist Dr. Lijinsky said " they are among the most potent cancer causing chemicals known; furthermore Dr. W.j. Visek of the New York state college of agriculture and life science of cornell university states: the presence of ammonia increases susceptibility to virus infections, which are known to cause cancer in animals and are suspect in man. Other studies show tryptophane an essential amino acid which is about 20 times more concentrated in meat than in fruit to be carcinogenic in the urinary tract. It is well understood and recognized in scientific literature that heat breaks down vitamins, amino acids and produces undesirable cross-linkages in proteins, particularly in meat.

“Some health enthusiasts eat chicken because they think white meat doesn't contain the fat and protein of red meat. This is absolutely false. Poultry is not a lean meat. It contains just as much fat as red meat because the muscle of any animal contains fat. (You can see this for yourself when you watch the fat separate from the meat in your chicken soup.) In addition to fat, it contains the same indigestible waste--and the same problem with hormones, antibiotics, and bacteria--found in red meat.” Dr. Brian R. Clement
The American Cancer Society reports: " Recent studies demonstrated that high temperature cooking of meat gives rise to a wide variety of substances that have been shown to cause cancer in animals and that have caused damage to DNA in well established test systems. The toxic action is considered to be a prelude to cancer." To support this, a 1990 study at the National Cancer Institute led by Richard Adamson, Ph.D., found very potent mutagens known as HETEROCYCLIC AROMATIC AMINES (HAA'S) in highly heated beef, fish, poultry. These HAA's are among the most powerful metagens ever studied, meaning that even a relatively small amount can cause significant damage to DNA. (Mutagens are almost always carcinogenic.)
New research from the Lawrence Livermore National Laboratories of Livermore, California indicates that its not just highly heated meats that pose a problem. Lab scientist Mark Knize and a team of researchers studies the effects of different cooking methods on a variety of foods, including breads. rice, eggs, tofu, and gluten- and tofu based vegetable patties. Using a test that is designed to mimic human metabolism, the researchers found mutagens in each of the cooked foods. In almost every instance, the higher the heat, the higher the level of mutagens.
